Last night with dinner, we had a delicious whole grain bake at home loaf of bread. We only ate about half of it, so the rest, of course, was destined for sandwiches…but not ordinary Boring Sandwiches… I have two gigantic wine barrels full of mint in my backyard, so that served as further inspiration. The rest are just some of my favorite ingredients. Happy Lunch!
Crunchy Avocado, Spinach & Goat Cheese Sandwich
- 4 Slices Whole Grain Bread
- ½ Avocado, Sliced
- 1 Ounce Goat Cheese, Room Temperature
- Salt & Pepper, to Taste
- 10-20 Spinach Leaves, Depending on Size
- Jicama, Shaved *
- 2 Sprigs Worth of Mint Leaves
- Handful of Alfalfa or Clover Sprouts
- Spread the avocado slices on two pieces of bread. Spread the goat cheese on the other two. Season with salt and pepper.
- Top the avocado with the spinach, jicama, mint, and sprouts.
- Top with the goat cheese covered piece of bread
* To shave the jicama, first use a vegetable peeler to remove the skin. Then peel shavings from the exposed flesh.
